Yes. you can 1. add custom SQL after connected to databse, or 2. add initial SQL when you connect to database.
Below are 2 examples, I am using Prep 2019.3 and the option may vary depends on the database type.

Yes, I have been working with Power Query M formula language. That is why I thought at first Tableau Prep would also allow users to modify the codes behind the flow charts.
It is nice to have each step in the process represented visually. However, coming from a background with some programming knowledge, being able to edit the operations directly can be more efficient at times.
Essentially, I would like to know if in addition to this UI
there is a button somewhere that takes me to a UI like this

At this moment, however, I am looking for something simpler/different. That is, if I download, say, a CSV file and set up a flow in Tableau Prep, is it possible to alter the flow's codes directly? Please see above the graphs (my reply to Naveen).

No, it is not. Prep is a visual tool by design. You cannot edit the code behind the visuals.
