So no you haven't been dreaming up Tableau features and functionality
If you select a mark (or some marks), you should get this
where you can filter (either keep or remove) the selected marks or add to a set.
You will need to make sure that in tooltip the "include command buttons" is ticked, but that is the default

Ah yes I think I know this one.
So you have selected (from the Analytics) menu to not have "aggregated measures" ticked
In this case Tableau doesn't show those options as it can't add dis-aggregated measures to a set (a set it all entries of the selected dimension(s)).
If you turn this back on, and then use the detail tile to determine what level you want each mark plotted to. If you want them all (as would be the case with aggregation off) you can add all the dimensions that make up the data level of detail. for example in Superstore the data is at Order/Item, so adding both Order_ID and Item to the detail tile has the same affect as having the data dis-aggregated.
Thank you, that is exactly what i was doing (unchecked Aggregate Measures). I appreciate it, that was driving me absolutely nuts.
