Do you have access to Prep? If you have requirements to keep the data unnormalized as Sample Datam you can do the following:
- Pivot Sample Data table
- Then join it with mapping table
- Then un-pivot it back with the new column name. Check the following for example https://vizpainter.com/unpivot-in-maestro-rows-to-columns/
A - I do have Prep but that's only for limited time - not planning to invest in it as perm solution.
B - As I mentioned the data can change from Customer's end at any given time - this means when we get raw data we need to run it through our ETL and in order for this to work in Prep is for me to keep an eye out on when data changed from Customer - trigger the job to run from Tableau Server to Tableau Prep (schedule the flow) - which currently I cannot do if I don't have a license for it on Tab Server (Tableau Prep Conductor is licensed through the Data Management Add-on) - again not a practical outcome without things in place.
If this could be done with SQL query or some other way within Tableau Desktop then I am open to suggestions. Thank you!

I can't think of a way to accomplish what you need to do with Tableau only. Other might have ideas. If you have Prep, you don't need Conductor to schedule the workflow. You can utilize command line to run prep after your ETL workflow.
If you are not planning to invest in Prep and you mentioned you have an ETL tool currently, have you evaluated the possibility to normalize the data in your current ETL? PREP is just another version of an ETL tool.
