You are not missing anything. There isn't a way to do it.
We have a similar problem in Netezza where we are unable to update the database name.

You may want to check out the Content Migration Tool - Tableau which was just released as part of the Server Management Add-On on version 2019.3. As part of the migration plans you can modify published data sources (Migration Plans: Published Data Sources - Tableau) and I can see Service there for Oracle:
I believe this would end up being a download/publish, which may take some time on large data sources; however, through this it would be an automated bulk process instead of manually doing it for each connection, and it could run overnight or during a planned downtime window.

The content migration tool supports content that is within eight versions of the highest supported Tableau Server environment (2019.3). So, as of today, it will only support content that is saved in version 10.4 or higher. A few other notes:
• The content migration tool can deploy across Tableau Server versions (including higher to lower), but will require that any features used in workbooks and data sources will be compatible on each Tableau Server version.
• The content migration tool does not provide downgrade/upgrade content capabilities like Tableau Desktop does.

I wanted to make one point of clarification after I double checked the meaning on 'content' and supported versions with Product Management. Workbooks and data sources which have been published within 8 versions of the latest can be migrated by the tool, but your Tableau Server needs to be on version 2019.3 and older for the license key to work. In other words, you can deploy across Tableau Server versions above 2019.3. For now, that means only this one version, but as new versions get shipped you could do 2019.3 -> 2019.4 and viceversa.
