You could do this by setting up permissions on the project. You can deny the permission to 'View' data sources:
If you do so, the view will change from this:
This won't be ideal however, if users go into the 'Data Source' tab within the workbook will not be able to see details about it. From this:
I understand this is a change from prior versions which will take some adjustment to end users, but one advantage of seeing data sources listed there is that users can go into Ask Data quickly: Try Ask Data | Tableau Software. I'd also expect the UI to keep going into this direction of a unified interface for all types of content.

Hello, I am in similar situation, company is updating to 2019.1 soon, and I am testing in pre production which already has 2019.1 applied and I noticed this data source thing. This is going to cause HUGE confusion with our users. I know you can deselect it from the drop down, but unfortuantely they does not "stick" and every time you go into Tableau you'd have to uncheck it.
I tried the solution above by changing the "View" permission on the project to Denied, however it does not work, have had a couple people test and they can still see anything. Any suggestions??
