To set the fiscal year start month for a data source, follow these steps:
- Right-click (Control-click on Mac) the data source in the Data pane to open the Date Properties dialog box.
- Set the Fiscal year start field to the appropriate month.
For each date dimension, you set the fiscal year start-month separately. In the Data pane, right-click a date dimension (Ctrl-click on Mac), and select Default Properties > Fiscal Year Start.

Did you know that you can select multiple filters choices in Tableau like you can in Excel? So by holding shift you can select all options in between.
I think Ritesh answers your second part of the questions quite well.
I still could not get this to work. I already have my fiscal year correctly setup from the data source to begin 7/1.
I dont think its much about the filters - how do i get the data to display the current YTD and the previous 2 years on the same worksheet/dashboard.
I did also find some videos online and when using the Today function - it does not take into account our fiscal year begin dates.
Do you have any other ways this can be done.
