Hi Daniel,
It's been awhile since I did this and Tableau might have changed behavior. What I've done in the past is to in Tableau Desktop set the page orientation and then republish the workbook. My memory is that sometimes this didn't work for regular worksheets so in those cases I had to put them in a dashboard and set the page orientation for that.

I have the Dashboard size set to "Letter Landscape (1100x850)". I have "printed to PDF" in Desktop as well as downloaded to PDF off Server browser both in Landscape generating the desired output. Still my scheduled email attachments are arriving as Portrait orientation instead of Landscape orientation.

Did you go to File->Page Setup...->Print Scaling tab? That's what I meant by setting the landscape orientation.
