Have you tried wrapping it in the ZN() function? So when the result is NULL, you'll get a zero.

So I have two categorical values that I am using to create a table matrix (food and expiration). The food variable has "apple" and "bread" as options and expiring has "expiring in 5 days", "expiring in 10 days", and "expiring in 15 days" as options. When I create a table in Tableau I use the count of the food variable. If there isn't a value I would like to show a zero in the table. For example, zero apples are expiring in 15 days.
