Here the answers as per my understanding.
Tableau Server All data:
To migrate all data from one server to another
Take backup of the existing old server using tsm backup command Backup and Restore - Tableau.
After backup completed the restore the backup file on new server Restore from a backup - Tableau
Only one workbook:
if one one workbook needs to be moved from one server to another server,From tableau desktop
Sever-> Sign In -> New server address -> Login credentials
After that publish the workbook on new server

They do not migrate data from UAT to PRD environment - they are diffirencely, just need about:
- After develop deshboard in UAT, and they want to bring it into PRD.
- In design period in UAT, we have connection into database server in UAT, and public it into Tableau Server in UAT - One moving the dashboard to PRD, they do have Public data. How to get public data in PRD environment?

I'm not sure if this is applicable to your questions,
but just wanted to pass along this link about a method
for switching the datasource from Dev to Prod:
Apologies if you have already tried that.
You can try exporting the site, but it will move the entire content. Also you need to make sure users match in both environments before doing this: Export or Import a Site
This does not answer the question about changing the connection. You can either write a script to do it via REST API or edit it in web if there is not too many of them. You can change the server name and username, unfortunately you cannot change the schema name, so you need to make sure they match.
