I'm not sure that I quite got there, but maybe this can give ideas.
Using the parameter, I made a selected sort by field:
CASE [Select Sort by]
WHEN "Category" THEN [Category]
WHEN "Sub-Category" THEN [Sub-Category]
WHEN "OrderID" THEN [Order ID]
This field can be placed on the left side of the Rows shelf.
This can then be hidden by unchecking "Show Header".

The problem is, that I want the table to first sort by Ex: Avg Days overdue and then be able to have a sorting parameter like you have above. And I want it to sort alphabetical based on the amount of Days overdue.
Does this make sense?

So originally what I had was a measure value at the beginning of the table (hidden) and on it (I sorted it by Avg Days overdue) ... but in order to use the Sort by parameter, I had to switch that Sort to Sort by the (Sort by Parameter ... Custom). Is there a way around this?
I am not able to add the actual workbook but will add an example workbook if I need to.
