The ability to hide the data soruce icon is not currently built into Tableau. Setting a user permissions to the site to be of the "Viewer" role will allow them only to see the very basic information as shown above in your screen shot. This would be an excellent feature request that you should add to the Ideas forum space. Our Product managers review the Ideas to help plan for future releases.
One workaround would to present the views as embedded Vizzes on a web page as embeds do not display the same data source icon. There are several methods for embedding that are outlined below.

Thank you Patrick. To get a 'quick fix', I've denied my "all users" group access to the Data Sources. Unfortunately this also prevents updates and a few other features that we depended on.
I'm just surprised this issue hasn't come up before.

I am glad that you found an answer. I know that most of our users are usually concerned with just the connection information being exposed. In this case it is just the name of the data soruce being and file type being exposed.
Our viewers only need to know "that"they are connected to live data and not the actual names of the database & tables they're accessing.
