Please find my solution attached by pivoting your data as below
create the calculation field to count
Hope this helps.
I'm not sure this will work in your true setup,
but I made an attempt.
Because the calendar will only show days and weeks that have data,
I would recommend rightjoining to a calendar scaffold (if your setup and will allow).
The scaffold is a single column of everyday from Jan1,2017 to Dec31,2018
(you can extend out as much as you'd like).
I would also recommend pivoting all of your date columns into one using
Tableau Prep or within Tableau:
Then your data would be rightjoined to the scaffold
with [Pivot Field Value] = [Scaffold Days].
Then the count could be COUNT(Pivot Field Names)

This appears to be the solution, i will try first thing tomorrow with updates.
I like the coloring detail as well as it really provides a clearer picture.
