I have run into this issue before. If you are opening up a previously created flow in the new updated version and it just won't load... start over. I've run into this issue many times while upgrading to newer versions with Tableau. Or you'll end up submitting a ticket and it could be resolved... however you'll be waiting days if not longer for a solution.

I did that, performance got better initially, but then after deleting a left join and after creating a new left join while creating the flow, it got slow. It's been loading for 5 minutes already without any warning or message.
Big problem for me.
Takes >5 min to load five workflows pertaining to five tables, all text files.
Once open the performance is fine.
The largest single file as ≈1.2 million records.
The workflow does have joins. These are straight forward, with a total of four joins.
Are the joins based on Integer values or String Values? I'm assuming because you said "text file" that these are all string values... I'm no expert, but I would create a few dummy calculations to turn your lookup values into integers rerun it and see if your load time is reduced.
String values, to answer your question.
I have converted them to integers.
Same problem ... long time to load the file.
It's unresponsive for >5 minutes, once the workflow file is open.
After than it works fine.
Incidentally, running a 4GHz Apple iMac, 32GB RAM, and 1TB (fast) SSD.
