You can sort that list, but it's a manual process.
Edit your parameter. In the list of values, you can click-hold-drag entries into a different order. So, if you want all the 2014 entries to come first in the list, in calendar order, you can drag the entries around until they match what you want.
There's no automated way to do that, though.

Display [Order Date (copy)] in a new worksheet and sort by [Order Date] ascending.
On the menubar, click on Worksheet and select Copy - Crosstab
Then create a string parameter and select 'Paste from Clipboard'. Rename first row value to 'Current Month'

No, it's static. Parameters do not update automatically.
However, if you are using version 2018.2, we now have access to Extensions, and one of those extensions is a Dynamic Parameter.
Scroll down and look at the bottom row of Extensions. One of those might be what you need.
