You can create a new variable with below logic:
This will take only 10 characters from left hand side and the output is of string data type.
But it gives me the subset of the field. But I want to change it to say..03-13-2018 to 03-14-2018.
Start time Cutoff time Due time
03-13-2018 21:04;27 00:30 03-14-2018 00:30

What logic exactly you want to use for cutoff time??
is it date part of [start time] + 1 and cutoff time?? If yes, below is the logic:
STR(DATE(DATEADD('day',1,DATE([Start Date]))))+" "+[Cut off time]
That's because the conversion of date to string.
If you want to retain the format try below logic:
New Date : DATE(DATEADD('day',1,DATE([Start time])))
Cut off date :
STR(DATEPART('year',[New date]))+" "+[Cutoff time]
