The only workaround I can think of isn't dynamic. So even if your profit changes, your labels will remain the same as long as you don't have the current value in view.
If you right-click on the white space next to the y-axis and select 'Annotate Point', Tableau will return SUM(Profit) for that point. Instead, you can manually enter the desired value.
I would not recommend using bar charts if you are not going to show the 0 point.

One method to show values off scale is to set them to the floor:
IF SUM([Profit])< [Profit Floor] THEN [Profit Floor]
Then to change the shape to indicate that they are off scale.
