There is no way replace data source will fail if you have exactly the same table names and field names and both data sources are populated with the same kind of data having the same data types. I know Dev and Prod environments often have data lag issues. If the difference is only related to time lag and not schema or data inconsistency, then the replace data source operation should be fine.
Meanwhile, I saw your other question. You don't need to replace the data source from Dev to Prod. You can just build one workbook publish to Dev and then change the database server address from Dev to Prod after publishing to Tableau server. Alternatively, when you login into different environments via Tableau desktop, you will be able to access the correct database tables whether Dev or Prod. Your database team can help you configure this.

Will my order of colors also get changed, also the order of shapes etc get changed? any idea?
Most times it won't change but depends on whether the colors are based on calculated fields. I'll always keep a copy of the original workbook before replacing the data source.
