Technically Tableau Server is not supported on MacOS. That isn't too say you can't get it working, but it's worth noting that Tableau only tests Tableau Server on the supported platforms. One concern is if you do run into issues then really Tableau support won't spend time troubleshooting since it's not a supported platform:
I definitely would go with Linux.
It Is free and surprisingly easy to set up if you read the instructions carefully! You can use virtual box to get started.
You can administer the entire server from Terminal on your Mac. Once set up, you can handle most functions via the web interface.
Personally I used Ubuntu server (command line interface) and set up local authentication as the identity store.
