Is this a Tableau Prep question or a Tableau Desktop question?
Ah - it's for Prep.
Okay, just making sure. I was going to try to help but I ran into my own Prep issue
I'm guessing it's an oversight and they'll enable in a future release.

Here's my sample. I renamed the table:
I then saved the flow (.tfl).
The .tfl file is a fancy file extension for a .zip file. If you change the file extension to ".zip" you can open it in 7zip or Winzip:
Note: .tflx is also a compressed (.zip) file, just that it will contain data as well, very similar to packaged Desktop file (.twbx).
In this example I simply extracted it to a folder:
Here is what's inside the Flow1 folder:
Open "flow" in a text editor:
Note: I use Notepad++ because, well, it just rocks, and when I click on a curly brace/bracket or parens it's opposite will highlight as well.
Here is what we see. The "name" is the custom name I gave to my table. The curly brace signifies the particular table we're viewing:
If you follow the information down to the ending curly brace you'll know the specific table you're working with. The content above the curly brace (within the red box) is the actual table name
I know it's not as simple as "Revert to original name" but it's a work-around for now and thus all is not lost
HA! Well....I'd love a revert button but that works too! I ended up just recreating the flow (it wasn't too complex) but I can use this for the future.
I agree, a revert button would be easier! If you create that Idea post it here and I'll go vote it up
