I recommend some string normalization.
LOWER([City]) will give you matching same-spelling cities.
From there, you could capitalize -
UPPER(LEFT([City],1)) + MID([City],2,100)
Thanks. I figured there was a formula for doing that. The trick then is just incorporating the new calculated field back into my reports in place of the original field.
That's the easiest part, right click your current city field, and one of the bottom options is 'replace references' - any calculations or sheets that leverage your previous [City] field will be replaced with your new [City Normalized] field.
True. That part is easy. I am more concerned that I just have several fields to do this with and I already have quite a few calculated fields in my data.
I think you have the best solution, although I was hoping there would be some setting in Tableau that would let me tell Tableau to recognize these as the same rather than having to make a calculated field for every category with this issue.

I hear you on that - unfortunately I don't think there's a magic bullet. You could push the logic upstream to your source system if possible.
