Hope you are well?...and I've still not had a chance to try out your network chart technique (but feel I'm getting closer to a free day!!)
So the way ZZ has suggested is the only way I know, but it does mean the user will have to re-select All if they have changed the original filter
Another way, which is slightly better would be to use a sheet swap, where the filter is only affecting the one sheet.

It's admittedly less intuitive, but using Zhouyi Zhang's method you could flip the [Sub-Category_ZZ] filter to an EXCLUDE.
Your $ Discount remains operable (except the user excludes categories), yet a return to $ Profit retains all categories. This may resolve the double-click-ALL issue Simon Runc brings up, without creating a sheet swap.
Additionally-- your $ Discount sub-category choices remain if you jump back to that view.
