Alvino Vaz I've attached the workbook with reduced number of columns (can't share all the data). Ive also updated the screenshot, if you see Week 1 and Week 5, they're starting from different days . Not sure why.

As per my observation you week 1 starts from Wednesday because there is no data for the days between saturday-Tuesday.Find the screenshot attached below.
In order to display this you need to follow the below steps.
Analysis>>Table Layout>>Show Empty Columns.

The issue is why does the week 1 (month 1) start from 1st Feb, it should be 4th Feb Saturday. Check the underlying data values to see it's picking values from 1st and not 4th.
In current picture, Week 1 is starting from Saturday but the date is 28th Jan.
Ideally, Week 1 should be starting from 4th Feb, Saturday not 28th Jan
In your case, fiscal calendar does not start from 1st day of normal calendar.
Then you cannot use Tableau' s equipped fiscal calendar function.
Instead, to get right fiscal year,
1. you create another table with all normal date and fiscal year,month,quarter.
2. You calculate fiscal year from the logic
Because there are not enough information how your fiscal calendar are determined , so I tried to align fiscal year only.
My assumption is Fiscal year starts at first Saturday of February.
(2/1~2/7) can be the candidates every year.
You should calculate month and quarter based on your fiscal calendar logic separately.
If your fiscal is based on 5-4-4 calendar, here is some hints.

My Fiscal Quarter-
Q1 - FEB, MAR, APR ,
Q2 - MAY, JUN, JULY,
Q3 - AUG, SEP, OCT
Q4 - NOV, DEC, JAN
Each fiscal week starts from Saturday and ends on Friday.

That's not enough. I am not asking about week, but month. When each month starts?
Is that the first Saturday of each normal calendar month? (1-7 always)
+37 is to avoid January +First Sunday ~Friday of February to be judged as new fiscal year year.
1/1 +37 = 1/38 = 2/7
In any day of week's case, the first Saturday from with datetrunc('week,[2/7],'Saturday') should be the first Saturday of February.
