There used to be a method floating around in the community to use a different path for extracts, but I can't find it now. It used the standard variables in the yml files to specify a different directory. In any case, it was 100% unsupported, and known to cause bad recovery problems in at least one case I can think of.
I've often wondered about simply mounting another disk to the regular extracts path. In Windows, when you are setting up the disk, instead of assigning a drive letter, you can mount to an existing point in the filesystem. I don't have an empty disk to do this with right now, but it looks like this:
I wonder if that would work. I'm reasonably sure it's not tested, and therefore likely unsupported, but at least you're not actually changing any paths or options. You're just changing mounting a different disk in the normal path.
