I've just tried the same by creating a data source based on a SQL Server live connection and I get the same behaviour. I'm guessing this is just the way it is. Tableau is only letting you hide fields in a data source that are not in use and even though its a data source filter, its still technically in use.
Only suggestion I have is to name this field in a way that means it doesn't get mixed up with all the neccessary fields .. eg zz System - Filter or organise the data source into folders and create a zz System folder...
Morning Donna and thanks for trying to find a solution. That is basically what I've done...used a consistent naming convention to identify fields that aren't needed when exploring data and creating vizes. I have added this as a suggestion in the Community for Tableau to consider adding so keeping my fingers crossed!
