What version of Tableau are you using?
There was another post on the forum that had a similar color question and the issue was "solved" with later versions of Tableau.
Apologies, I looked but couldn't find anything.
We are using Tableau 10.0 at the moment.

I apologize and mispoke about it being a color question. It was a parameter question. but here is the link: Reset layout filter after publishing
Doesn't really speak to your issue, but it was a similar "hey.. why is it doing this?" kind of question. However, since you are using 10.0 I don't think that is the issue at hand.
I personally have no idea. I'll be following this post as I'm curious to the reason why as well.

After updating my Tableau to Tableau 10.0 I also acknowledged the same color issue. I assume you are using a dimension or a measure to change the color of your icon: in your Tableau Repository the icon is probably also black. The change of color is something you (probably) cannot resolve in Tableau Desktop, but which you have to change at Tableau Server. I solved my issue by disabling the client side rendering on Tableau Server with tabadmin. This topic might help you: About Client-Side Rendering.
