Just put the parameter on color mark. Then as you change the values of that parameter make a change to the color of those values.
For example: When you select False in your screenshot you get 0. Change the color for 0 to maybe 'Yellow' and similary do it for 1.
This is how you can achieve this.

Drag the parameter onto the color marks, you'll get two color as per you boolean parameter to get color as desired click on the blue color icon(referring the pic) and change to whichever color you want 0 to see and you can easily display it.

I didn't get the Legend colours I assumed I'd get, you are right, cycling between 1 and 0 and actually selecting the colour was correct.
My version of Tableau required me to click the 0 or 1 in the Colours box and then click the colour directly.
