Yes - you can certainly do that.
You can go to Data -> Connect to Data -> Text File -> Open the folder where all the CSV files are kept and double click on any one of the CSV file. You should automatically see all the CSV files in that folder listed in Tableau.

You have to fetch CSV files one by one and then you can UNION all the tables else if you want to create join then you can also do that.
