I recommend simply creating a Group for Total Pipeline.
Simply CTRL select the values you want to group into 'Total Pipeline'. Choose the paper-clip icon to group them. The group becomes a dimension that you can apply in other places.
Now, coloring takes just a bit more work, but still easier than Custom SQL.
Create a Tableau Calculated Field to define the KPI that will be colored. Example I created is:
IF [RecordType]<>'Closed Won'
Example is attached here, in Version 10.

What you'll want to do is break out each segment as a different Calculation. In the attached workbook, I've created a calculation for Closed Won, Pending, Pitching, Total Pipeline, and Target (Calculated by using (sum(if ([RecordType])="RecordType" then ([Revenue]) else 0 end). Once these are created, you can just put Measure Values in the rows to see the ones you would like.
