I think UNION is your single reasonable option. Especially if you'll filter your viz to require data from single table at the time. That way you'll rely on database optimization logic for performance.
I'd also try the alternative method (if database allows) via stored procedure with parameter.

I wonder if you could build 3 separate datasources and 3 separate sheets and cycle between them...

Would you mind showing an example on how to change a data source table using stored procedure with parameter?
I think union can't be a way for my case as the resulting dataset is too large and Tableau just hangs when trying to load it.
