Thank you for wanting to help. Attached is basically how i want the data to look like in tableau. I removed all extraneous fields and only provided the ones i have questions about.
Also may be interested in looking at "prior 4 day of week average" meaning, if today is Friday, what were the averages of the last 4 Friday's prior.

Essentially the business ask is to create views like "today" and "yesterday" and "the average of the last 4 Wednesdays (if today is a Wednesday)" and to calculate how they compare with each other. So for example yesterday and today might have a 2% variance and that would be deemed acceptable in frequency, However when we do this tomorrow, we see a 10% variance and that should trigger some concern.
Is there another way to satisfy this in your experience?

First thing you need to do is Data pivot.
Then create calculated fields.
