If any user edits the workbook, by seeing the author and last saved by details, will come to know who has edited the workbook.
Same like Excel do we have any option to track this information.

It shows only the owner name, we can get the last update time and date but we can't get the new author who used it lastly or modified your workbook.If you publish your workbook in tableau server means We protect our workbook from other users.

If you publish your workbook in server you can track those details.But keeping them in local machine you cannot get that option.
I have a small doubt if it is in your local machine you can protect the workbook by placing it in folder and locking it.or providing some security through third party tools.

Use the following options as a workaround for securing the file or data.
Option 1: Secure the Folder Containing the Workbook
Work with your internal IT team to restrict access to the shared folder that contains the workbook.
Option 2: Use Tableau Server to Secure a Published Data Source
- Publish the data source to Tableau Server.
- Replace local data source with published data source.
- Secure the published data source so only authorized users can access it.
Cause
The ability to password-protect a workbook is not currently built into the product.
