Hello Richard - There are may ways this can be achieved. I have picked up only one of the way.
First of all, I have created a sample data based on my understanding of your requirement.
Now I have created to Worksheet (Interest to Person) and Person to interest
If you select "Basketball" from the interest filter, then you will get Abe and Sam. Now if you click on Sam then you will get the following interest of Sam.
Published the Same in Tableau Public for your reference:
Thanks so much for the rapid and useful answer!
Wishing you health and long life.
Thanks Richard, its great to hear that this answer helped and thanks for your wonderful comment ! - Manideep
This is good information. However, I realize now that this is not entirely what I need. I should have been more clear. In the example you gave, I would want to be able to click on basketball and have it immediately show me all of the interests for all of the persons who like basketball without showing the interests of the persons whose interests don't include basketball, rather than having to click on a specific person.

Here I've used below mentioned data set in my viz.
As per your requirements, If you select any Interest or Hobby then It'll show you the list of person as well as their other hobbies. I've skipped your second requirement I don't know how much this help you. Let me know If you've any query.
e.g; Here I've selected Basketball. Its returning two persons Abe and Sam at same time you can see the other interests of the same person without any selection.
You can find the workbook (public version 9.3) in below mentioned link. Have a look.
Thanks so much for your help! Now what I have to do is study it, and see if I can understand it. What I really want to be able to do is select multiple hobbies at once, and get all the hobbies for all the people who have any of those hobbies.
