On your worksheet, go to the tab "Data" on extreme top left corner"
Right Click on the Data (Source) which is currently connected and Click on "Rename"
A dialogue box will appear with header: "Rename Connection" go ahead and update the "Name:" to the one which you want and click "Ok"
Go to "Data" Hover over to the connection name which you want to change, and click on "Rename"

Yep there is definitely a gap there....
Far as I'm aware it's not possible without re-naming and republishing the Data Source from Desktop (even in v10) - which isn't really a viable option if you have a large number of workbooks that point to that Published data source.

Rename a published data source? That cannot be done out-of-the-box. I'm guessing it's because the workbooks saved in the Tableau Server that reference it would need to be edited as well.
