Have you tried the function CONTAINS() ? Another thing that might work is to put the [Field] onto the filters shelf and then go to the 'wildcard' tab and using contains there put your value in that you're searching for. But no you cannot force Tableau to use a different way of building the sql query. Whatever Tableau thinks is best it will use.
While I cannot be sure that Contains will actually give me the right result as it sends a LIKE '%Text%' query instead of a LIKE 'Test%' query. It does work in my case since I know that "Text" can only be in the beginning of the string. So it solves my problem on a practical level, but theoretically it is still not bullet proof.
