One thing you could do, if you can't find it, is install a trial version of server on your machine.
It's very likely that someone would have a sample dump of the PostgresDB though - which would be easier, of course.

This is a great idea. I can see it being a challenge generating meaningful user data and anonymizing it, then keeping it fresh through different versions of Tableau Server.
Did you know, though, that the database dump file is located in every Tableau Server backup you take? If you have a PostgreSQL server to restore the file to, just open your .tsbak file with a Zip utility, and extract the "workgroup.pg_dump" file from it. Restore that to your PostgreSQL server and you're good to go.
