File->Export Packaged Workbook will create the twbx file next time. I replaced your data source with my local superstore data.
You can create this with a dashboard action. If you don't want to see the other categories, just one filter action on just category would work.
If you want sheet two to disappear and then appear with just the category highlighted it is possible. Create a fake field
This action makes sheet two appear and disappear when you click on sheet 1
This action will highlight the category on sheet 2

You don't need to create a fake field. A standard action filtering on Product Category does the trick. The key is selecting "Exclude All Values" upon clearing the selection (like Adam has done above). If you put these sheets within a layout container and remove the title on Sheet 2, it will expand and contract in addition to just appearing and disappearing. Not sure if this is what you want.
