I'm on 9.0 so I'm not sure if the method is the same but here is what I do.
1. Navigate to your workbook on server. Click. This will open up a page that shows all the views in the workbook. Each view will have a checkbox which you will need to check in order to set permissions. Check that box and an actions menu on the upper left of your views will appear.
2. Click on the action menu and select permissions.
3. Set your permissions.
Ok, if you publish your workbook as tabs I don't think you can set permissions for individual views. Try publishing a copy of your workbook and uncheck 'show sheets as tabs'. I think that will give you the ability to set permissions on each view in the worbook, It may not be a feasible solution depending on your enviroment but it's my understanding of how the security works.
If the solution is not feasible look into row level security. It can be a pain to set up but gives you great control over who can see what.
