Yeah this becomes a little difficult with the way your data is formatted. It is wide vs. the needed tall data structure. However, you can everything the same and change the mark type to 'line' and swap the measure values and price tier positions. Meaning drag measure values to rows and price tier to color. Additionally you can right click on the date field on the X-axis and edit the alias so that it doesn't look like 'avg. of 1/31/2015' (ofcourse only if you want to).
So you were nearly there!...You just needed to add measure values to the Rows Shelf.
In short...Green Pills create Axis, and Blue Pills Headers...here's a great article with a more detailed explanation
Going forward you might want to think about re-shaping your data, else you are going to need to add a measure for every time, and when the data updates, manually add the latest one. If you had time going down, you can just add this 'Time' dimension to the Column Shelf, and it would then just extend the line as new data came in.
Hopefully this solves your issue, but if not please post back

Thanks everyone, this is very helpful and solved the problem perfectly! Looking forward to the future where I can help pay this forward...
