Automated fashion, as in, built-in Tableau functionality? No. It would need to be custom.
There isn't metadata about extracts on the Tableau Server that I'm aware of. Moving this question to the Server Administration forum since the folks there may have suggestions on getting such data.
I think automated would require a bit of scripting.
In terms of comparing metadata differences though, you could just download the Data Sources from you Test and Production Server via TabCMD - this will save them as .TDSX files.
If you then open those TDSX files via 7Zip or any other Archive Manager, you should be able to grab the .TDS file which contains the metadata in XML format defining the Data Source.
