I just tested using only a team mate's email addy and she didn't receive an email but I did. So the Email To * doesn't appear to be working for me.
The .yaml file is as so:
# list of domains vizalerts can send email to
So when I replace the contents with my domain(s), do I leave it surrounded by the square brackets or not? I'm trying to stick with the examples set forth in the file.

That is correct, leave the entry for smtp.alloweddomains in brackets, delimited by commas. No quotes necessary. That is the yaml syntax for a list of values.
What is the Email To * value from the viz? Lots of things could be the root cause. Would you mind sending me the VizAlerts log output? It should have better error information...
How do you fill it out if there is only one email domain? Are square brackets still required?
Update: Emails are now working as expected. Failure may have been due to our corporate data center move.
However, still curious how to fill out entry in .yaml file if there's only one email domain.
For the domain whitelisting:
- For a single domain: [mydomain.com]
- For multiple, use comma as a delimiter: [mydomain.com,gmail.com,yahoo.com]
