We are using a VM and while I didn't setup the server, I participated in a few of the discussions. Adding more cores helped us - but not sure what your environment looks like. If you're newly setting up a server - I think Tableau has a team that will help you in the first 30-days so you might try your sales rep. They also provided us with the document available at the link below - has some very good info in it about why you might find performance problems. Go Pack Go!
Have you identified the bottleneck? CPU? Memory? Database query?
Tip: Check to see if you have static allocation of resources...which means that those 8 cores and 32 GB of memory will only be used for your server and not available to the other hosts on the VM. This will rule out other VM's stealing all the resources.
We've been running this configuration for 2 years
Performance is down to a whole load of different factors, from the datasource all the way up to the design of the visualisations. We tend to start at the datasource and work through the whole stack when someone complains about performance.
You'll get a lot of benefit from implementing custom admin views to gain great introspection into usage and performance. See Tableau Zen: Custom Tableau Server Admin Views or speak to Mark Jackson. We correlate data from server monitoring tools against the usage to see the impact of new users on the overall system perfromance. Also be mindful of network latency and timeouts if users from remote locations are having more issues than local users.
In terms of VM performance, throwing more cores / RAM at something is likely to help but not always the best option. If you're worried about other VMs in your cluster stealing resource then you may, depending on your setup, be able to pay more to get a better tier of service that may give your machines a higher CPU priority. Speak to your admins about that possibility.

Whenever we used Virtual server for Tableau server application, We have to used Dedicated hardware in VM.
What is the Tableau version ? have you receiving performance issue on some dashboards or all the dashboards are running slow?
If you face issue with few dashboards, You can check performance using performance recording feature by Tableau desktop.Create a Performance Recording
