Currently Tableau does not support more than 16 columns in a crosstab view.

Tableau keeps moving the menu choice for this, but as of version 8, go to the top menu and choose:
> Analysis (then) >> Table Layout (then) >>> Advanced
And you will see a pop-up "Table Options" that lets you set maximum # of row labels and column labels (before they start to get merged automatically).

Just in case you have not taken a look at Pooja's link to "ideas" (http://community.tableau.com/ideas/2628 and please "upvote" the idea), that posting *also* tells you about a "hack" that will let you go well over 16 columns, if needed.
