Hey Shawn. I wanted to know the answer to this too, so I looked it up on the Support site. Luckily, I think I found the answer for you:
To change the TEMP folder location, modify the following environment variables for your computer:
- APPDATA: Tells an application where to store the data the application needs.
- TEMP or TMP: Tells an application where to store the temporary files during a process.

I also saw that article but wasn't sure if it applied to Server as well as Desktop. If it does, we may request that the article be updated
Ah, I'm sorry! I didn't even see the word Desktop in there until you mentioned it. My mistake. I think you're right--that article only applies to Desktop. On Server, I couldn't find definitive information, but some articles seemed to indicate it would still use c:\ProgramData if installed with the default config. In our situation, we install on the D drive. I suggest you open up your workgroup.yml file at:
...and check out what values are in there for the following settings:
The settings there on my server correspond with where I see temp file activity taking place. I have no Tableau folder in C:\ProgramData, so it clearly isn't using that path on our install.
