"Info" is the least detailed level of logging available in Tableau Server. If the logs are still taking up too much space, I recommend using Tabadmin Cleanup to reduce the number of unneeded logs. This article describes cleaning up Tableau Server in better detail:

I want to be sure I understand. 'Info' is causing log files that are too large. Do you find the log files helpful? If they are not being used for the information on 'default' then a lower setting such as 'error' might be preferred.
I'll ask our server support team about their experiences with these logging levels as well and get back to this thread.
Jeffrey - I heard back from our Server support team and they suggest one of these lower logging levels if diskspace is a concern. If there is some concern related to performance on the server though you may wish to contact support directly for guidance about your specific setup.
In general, the free disk space amount should be pretty high on a server instance. The guidelines for a Tableau Server are listed here.
