I may have it wrong, are you simply wanting to switch by parameter between Mon-Sun as a 7-day week, and a 52-week year?
Have you tried using a calculated field, parameter and two custom dates to control the date type?
I would like to switch parameter by:
1) 52 or 53 weeks per year --> this is my existing setup
2) exactly 7 days per week regardless of day where it should always start with Jan 1-7 then Jan 8-14, Jan 15-21 --> always 7 days and fixed dates regardless of year and day --> I don't know how to do this
Apologies, I misread your requirement - the attached won't quite achieve your desired output; I shall take another look at this this evening once home.
Thanks for your effort. The 52/53 week per year is already good to me because I used Month and Week in Columns shelf. For "exactly 7 days per week" these are fixed dates starting Jan 1-7, Jan 8-14 and so forth (regardless of year and day).

For 2014 it will be something like this:
DATENAME('week', [Order Date], 'Wednesday' )
1/1/2014 was a Wednesday. You'll need to change the DOW each year. You're still going to get a week 53 because 365/7 = 52.14

I have created a viz to show weeks by 7 days a week starting 1st Jan to end of year regardless of week days
1. Created a calculation to get day of year : DateDIFF('day',MAKEDATE(YEAR([Order Date]),01,01),[Order Date])
-- Calculation DayofYear in shared viz
2. Created a bin using this days to have bin size of 7
--See bin WeekBin in shared Viz
3. Edited Alaises for the bin and gave week mumbers manually.
4. COmpare the results with weeknumber of year .
Used Sample-Superstore to create scenario.

I have updated the Tableau public VIz but unable to show exact way requested in above screenshot . The issue i could find is if we consider 7 day week regardless of no days in month . Last week created is shared among Jan and Feb since it would include some days from Jan and Some from Feb .
CLosest I ca get is to show axis like on top . Please check VIz below. Working on bringing the same thing at bottom of X axis . Have ard time
