As with all the data field, Tableau makes a 'best guess' at what your data type and format probably is by looking at the first row after the header. T doesn't always guess right. The date format guess is also based on your machines location. On my remote machine in the UK Tableau guesses dd-mm-yyyy most of the time. My machine here in the US, Tableau guesses mm-dd-yyyy (or some variation of those).
A cool new feature in 8.2 is that when you establish the data connection you can preview Tableau's guesses and go in and correct the wrong ones before completing the connection. I think we're all going to find this very handy.
