The "Print to PDF" function will print whatever is on the dashboard (including the quick filters). It is possible to hide the Title, View, Caption, Color, Shape, Size and Map legends by going to the worksheet itself. Then, select File>Page Setup>uncheck what you don't want to print.

does Tableau Sever has similar set up for this?
Currently the settings Tracy refers to are only on Tableau Desktop. It would be nice to have those options on Tableau Server as well. Tableau Server > Export to pdf should respect whatever settings the publisher selected in Tableau Desktop. If nothing was changed on Tableau Desktop before publish, I believe the default will be to print the view(s) and captions.

When we convert our dashboard to PDF then it creates like a read only image of dashboard which shows data only on current screen not all data that is behind scrolls etc.While printing the PDF we can change settings like Layout(Size,Scaling etc),Content for a page.
