There are reasons for sure. Without a screenshot of your viz, however, it will be impossible to guess why the option is not enabled in your case.
I will jump back on this thread and say that I'm noticing the same issue. I noticed that I was unable to create any subtotals in Tableau 8.1, yet was able to in Tableau 8.0. So, I designed a simple experiment. First, I created a workbook using an extract and tried to create a subtotal. Here's the screenshot.
As you can see, the Subtotal option is available. Why wouldn't it be? So, I added the subtotal and saved the workbook. Next, I opened the workbook in Tableau 8.1. Here's the table again.
As you can see, the subtotals are still there and the option is available. Now, as soon as I remove the subtotal, it won't let me put it back.
This is quite perplexing and I have no idea why 8.1 won't let me create any subtotals. I've attached the 8.0 workbook in case you are interested.

That's about the simplest replication I can think of, Brad, and it's puzzling that Analysis->Totals->Add All Subtotals works but the context menu won't. If you haven't already, I'd suggest submitting this to Support.
Also, I just tried out the 8.2 Beta and I'm seeing the same behavior there as 8.1.

My actual response -- Please do submit this to support. I suspect that this is a known issue. I remember something similar filtering through my team but I cannot recall for certain.
This is still not working, I am using Tableau Desktop 8.2.2
Tableau team, any update on this issue? I see the same on the Tableau on Mac as well.

Had the same issue. I was able to add all subtotals and then remove the subtotals I didn't want from each dimension directly. Seemed to work.

I had a similar issue. What I did was analysis- show grand total all rows. Then click the down arrow on county. Subtotals should not be blocked anymore. Click that. Go back to analysis, and turn off grand total all rows That should work! Let me know.
If you are using 1 dimension, subtotal option is greyed out, because subtotal is not possible for only 1 dimension.
Try to do it using more than 1 dimension, its working.
Thanks, Mary. I added grand totals for rows in the Analysis menu item, then was able to specify which subtotals I needed. I deselected show grand totals for rows and the subtotals still remained. It's one of those funky things, but hey it worked in the end. Thanks again!
