Do extracts execute more quickly as a Data Source or as a connection in a workbook?

We have a workbook on our Tableau Server.  The workbook has 14 extracts to a MS SQL Server db but they all point to the same db, just the tables and/or Custom SQL varies.  The workbook is on an incremental extract every hour and takes 40-50 minutes to run!  Would the extraction process run more quickly if the data sources were saved on the server and thus updated on the server vs. in the workbook (which is, of course, published on the server)?  Or does it make no difference?

I guess my basic question is, would an extract update more quickly as a data source or data connection in the workbook?
