Figured it out using this guide
I created a new column in my spreadsheet called [Today] where the only value is the most recent date and time.
I then created a calculated field
if [Date]=[Today] then
ELSE null END
The when I used the calculated field for the color or label it only labels the most recent point and only changes that one point's color.
Another way, especially if you don't have data for today is to use last() in a calculation. Last is a table calculation, so by using exactly the same calc, but changing the advanced compute, I could choose to show latest by customer, overall, or even by changing the sorting, the first. Look at how the advanced dialog changes between the two sheets.
BTW, on the second, the overall last was hidden behind 100s of others, so I added the calculation to the size shelf as well.
